Summer is here, and if watermelon doesn’t say “summertime” then I don’t know what does. This salad is fruity, healthy, and refreshing!

I don’t know what more I can say about this salad. It’s colorful, it’s sweet and tart, it’s everything you could want from a fruit salad. It’s got plenty of nutrients, still light, but very filling.
We bought this watermelon and I was so excited to make this salad. I hadn’t planned on making it so soon, but when we opened the trunk out rolled the watermelon. Straight onto the ground. Breaking. Luckily it wasn’t broken enough to need thrown out and wasted. But now I have a whole watermelon balled in my fridge and I’m just looking for excuses to eat it. A giant bowl full of an entire watermelon takes up an awful lot of space in my fridge.
Also, goat cheese! Whoever decided making goat’s milk into a creamy, tangy, and soft spread was a genius!! I first had it on a the Hudson Valley Mix from Just Salad. I’m obsessed and they come in really small packages. There’s a variety of flavors, both savory and sweet.
Without further ado:
Watermelon Salad Recipe:
Balled or cubed watermelon
A dash of Salt
Well… there’s not a whole lot of instruction… stick it all in a bowl, crumble the cheese on top. Eat it with a fork.
Add some mint for an extra sprig of freshness.
I think some red onion would add some crazy good flavor.
Play around with some spices. I always think spicy and fruity is always a good mix. Maybe some cayenne?
Adding some sweet potato could also be really tasty and play around with texture (definitely cook the potato before-hand and stick it in the fridge so things don’t just get soggy)!
